I whipped up these Ice Cream Cereal Treats for the family yesterday and they were a big hit.  If you’ve ever had fried ice cream, that is what it reminded me of.

Ice Cream Cereal Treats

Ingredients:

  • Cereal of choice (We used the bottom of the Kellogg’s Frosted Flakes box)
  • Marshmallow creme
  • Ice Cream of choice
  • Chocolate or Caramel syrup (optional)

Directions:

Mix together cereal and marshmallow creme.  I used just enough marshmallow to combine all the cereal.  It works as a binding agent.  Press small amount of cereal mixture into a mini muffin tin, making mini pie crusts.  Place in the refrigerator for about 1 hour to harden.  Then spoon ice cream into the cereal ‘bowls’.  I used vanilla and chocolate to make everyone happy.  Place them in the freezer for about 1 hour to harden.  Pop out of the tray and drizzle with chocolate or caramel syrup and serve.

If you don’t have a mini muffin tin, you can use a small casserole dish and spread ice cream on top.  Once it hardens, you can slice into squares.  These reminded me of fried ice cream!
