This is one of my favorite recipes to make in the Fall. I make it like once a week starting in October and it’s perfect to take to get to-gethers. Ok now you know why I’m on Weight Watchers, so I can eat THIS stuff! It all started several years ago when a co-worker of Hubbies made some for the office. The nice man he is, he brought me a piece. I begged for the recipe for weeks and finally got it. It’s so yummy that I feel the need to share with the world. Here it is:
Pumpkin Chocolate-Chip Squares
2 cups all-purpose flour
1 tablespoon pumpkin-pie spice (or 1 1/2 teaspoon cinnamon, 3/4 teaspoon ginger, 1/2 teaspoon nutmeg and 1/2 teaspoon each allspice and cloves)
1 tablespoon baking soda
3/4 teaspoon salt
1 cup (2 sticks) of butter), room temperature
1 1/4 cups sugar
1 large egg
2 teaspoons vanilla extract
1 cup canned pumpkin puree
1 package (12 ounces) semisweet chocolate chips1) Preheat oven to 350 degrees. Grease 9×13 pan. In a medium bowl, whisk together flour, pie spice, baking soda and salt; set aside.
2) With an electric mixer, cream butter and sugar on medium high speed until smooth; beat in egg and vanilla until combined. Beat in pumpkin puree (mixture may appear curdled). Reduce speed to low, and mix in dry ingredients until just combined. Fold in chocolate chips. Bake 30 to 35 minutes.
These are a bit similar to brownies, in that they cook a little after they are taken out of the oven. I tried this with Splenda in place of the sugar last week and it was good. 24 servings means they are 5 WW points each. If you use splenda they are only 4. But it is worth the splurge.

Oh those look really good! I just made a huge batch of pumpkin bread and pumpkin butterscotch muffins. They are so good! I’ll be doing a recipe on Wednesday. Thanks for sharing this! It’s definitely on my list to do next.
