Homemade Pumpkin Donuts with Cinnamon Sugar Coating

Yesterday on Facebook, I shared that I had Pumpkin Donuts in the oven.  I’ve been wanting to get a non-stick donut pan for a while and I had a 50% off JoAnn’s coupon on my app.  I already had all the ingredients I need to make these so I got started right away.  It’s ok to have donuts for dinner right?



1 1/2 cups granulated sugar
1/2 cup vegetable oil
3 large eggs
1 1/2 cups pumpkin purée (canned pumpkin)
1  teaspoon pumpkin pie spice
1 teaspoon vanilla
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
1 3/4 cups Flour


Preheat oven to 350 and spray donut pan with cooking oil.  Blend all ingredients (except Flour) together until smooth.  Then slowly add in flour until mixed completely.  Spoon pumpkin mixture into each donut cavity.  Fill about 3/4 full.  Bake for 15-20 minutes or until toothpick poked into center comes out clean.  Let them cool slightly, and while still warm, toss them in a bag with sugar cinnamon mixture.  I was going to make a chocolate frosting but didn’t have all the ingredients.  That recipe option coming soon.
