I hope you all had a fabulous 4th of July! I remember as a kid, my parents always had friends over for the 4th of July and the Dad’s would always set off fireworks in our cul-de-sac. Here in Florida it seems like we’ve had a burn ban on July 4th fireworks for years, so that means no personal fireworks. It’s kind of sad!
But we made up for it with dessert. Remember I told you about the Dole Bananas event I attended last week? Well yesterday I decided to try the grilled banana boats. I had some nice bananas with lots of brown dots on them. I love the sweetness of these ripened bananas. We only had large marshmallows on hand so I cut them up into pieces and sprinkled on chocolate morsels. I also decided to toast some coconut to try on top. I burnt the first batch b/c I walked away and got caught up in a soccer game on TV! Needless to say we had to open doors to get the smoke out. Cooking FAIL! But I had plenty coconut on hand to try again.
Ingredients:
5-6 Bananas – Each Banana makes 2
1/2 Cup Marshmallows
1/2 cup semi-sweet chocolate morsels
1/4 cup coconut
Directions:
Slice bananas length wise with peel still on. Layout flat on a grill pan. I pressed a small line in the middle of each banana with a spoon, so the other ingredients would lay on them better. Spread marshmallows and chocolate chips on bananas and place on grill with temperature low. Place coconut on baking sheet under broiler till toasted. These cook quickly so keep and eye on them, and toss a few times if needed.
Take out bananas once chocolate and marshmallow is melted, then add toasted coconut. Serve immediately.
I served up the banana boats and sprinkled coconut on the bananas for those that wanted it. Let me just tell you, the toasted coconut brought it to a WHOLE NEW LEVEL…..YUM! I had 2 and I wished I’d had more! I was so excited about the coconut that when I tried to say the word while eating it, I said, “Coc’ed Tostanut!” I think that’s what I’ll name this version! They were so easy and I’ve decided this is my go to recipe when I have brown bananas I need to use. Forgive my pic on a paper plate, there was not time for a proper photo shoot.
