This is my Grandma’s banana cake recipe and it’s scrumptious. You can see from the original recipe card below, that it was written in 1978! My grandma put nuts in it but we like it without them. I also like making it in a Silicone Bundt pan. It keeps in moist but also has the nice crispy top. You can also use a 9×13 casserole dish. This is more of a cake than a bread.
Grandma’s Banana Cake
2 Cups Sugar
1 Cup Vegetable Oil
1 Cup Sour Milk (1 cup milk & 1 tbsp vinegar)
3 Cups Sifted Flour
2 tsp Vanilla
2 Cups Mashed Ripe Bananas
1 tsp Baking Soda & Pinch of Salt
Mix sugar, eggs and oil together. In another bowl, sift flour and add baking soda and salt, then set aside. Break up 4-5 ripe bananas (the browner the better) and mash them in a bowl. Mix sour milk and flour into sugar mixture. Measure out 2 cups of bananas and mix in vanilla. Pour bananas into rest of mixture and beat till mixed together.
If you don’t have a silicone pan, grease the pan first.
Bake at 325 for 45min to 1 hour. Place toothpick in cake and when it comes out clean, it’s done. If you make in the 9×13 pan, time maybe reduced. Keep an eye on it.
When I bake this, my kids have it for breakfast with a bit of butter spread on a slice and maybe even heated up a bit. YUM!
