Pumpkin Pancakes
Ingredients:
- 1/4 cup and 1 tbsp. flour
- 1/4 cup whole wheat flour
- 1/4 cup brown sugar
- pinch of salt
- 1/2 cup of milk
- 2 apples peeled, cored, and diced
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. pumpkin spice
- 1/2 cup pumpkin
- 2 eggs
- 1/4 cup flax seed (optional)
Directions:
- mix all ingredients
- cook as pancakes
- serve with syrup or apple butter or powdered sugar or whatever… I eat them plain… yummy!
