We had 4 bananas getting rather brown today so we needed a plan. Hubby ate one, so I made chocolate banana muffins with the rest. Ever since I made the blueberry muffins, I’ve been wanting to use my muffin pan again. Maybe these wouldn’t come out as pretty, maybe it was just a fluke. I had to test them again! Oh these were not only easy to make, they were very good. And yes they popped right out of the pan and looked beautiful. Here’s how you make them. First you need to set up your work area. This includes your entertainment and the laptop with the recipe. When you add the chocolate chips, and it doesn’t seem like enough, don’t be afraid to add MORE!
Chocolate Banana Muffins (Makes 12 regular sized muffins)
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- pinch of salt
- 1 1/2 cup of flour
- 1/2 cup chocolate chips
- 1/2 cup chopped hazelnuts
Preheat the oven to 350°F. Mix butter into the mashed bananas in a large mixing bowl.
Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour, mix until it is just incorporated. fold in the chips. Pour mixture into a prepared muffin tin. Bake for 25-30 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it’s done. cool on a rack.[/print_recipe]
The original recipe had sprinkled hazelnuts on top. I choose to leave these out, mostly because I didn’t have any on hand.
