I love potato skins with cheese, bacon and sour cream, so this recipe is inspired by them. The crispy outside of the tater tots with the cheese and crunchy bacon is enough to make anyone smile. So here’s a question for you. Do you say tator or tater? I think it depends on where you’re from! My family loved this dish and it goes really well with hamburgers. Hubby and I had lettuce wrapped hamburgers to offset the cheesy tator tot casserole and bacon. If you haven’t figured it out yet, the bacon is my secret ingredient. There aren’t too many people who can resist bacon.
Cheesy Tator Tot Casserole
1 Package (32 oz) Tater Tots
4 Cups Shredded Cheddar Cheese
1 Package (16 oz) Bacon
Salt & Pepper to taste
Sour Cream (optional)
Toss thawed tots with salt and pepper to flavor. Mix with 2 cups cheese into a 13×9 casserole dish (or a 9×9 dish if you half the recipe). Place in oven at 425 degrees for 15-20 min. Until tots are heated through. While this is cooking, brown bacon and let cool. Crumble bacon once cooled. When tots are done cooking, toss remaining 2 cups of cheese on top and sprinkle with bacon. Cook for a few more minutes, or until cheese is melted.
You can serve with sour cream or ranch dressing drizzled on top.
